Ingredients
For the Stroganoff
• 1 lb (450g) beef sirloin or tenderloin, thinly sliced
• 1 tbsp olive oil or avocado oil
• 2 tbsp butter
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 8 oz (225g) mushrooms (cremini or baby bella), sliced
• 1 tsp Dijon mustard
• ½ cup beef broth (low-sodium)
• ¾ cup sour cream (full-fat)
• ¾ cup sour cream (full-fat)
• ¼ cup heavy cream
• 1 tsp Worcestershire sauce (optional — check for low sugar)
• 1 tsp smoked paprika (optional, adds rich depth)
• Salt and black pepper, to taste
• Fresh parsley, chopped for garnish


For Serving
• Cauliflower rice, zucchini noodles, or shirataki noodles
Directions
Slice and Season the Beef: Cut beef into thin strips across the grain for tenderness. Season lightly with salt and pepper
Sear the Beef: Heat olive oil in a large skillet over medium-high heat. Sear beef in small batches, 1–2 minutes per side, until browned. Remove and set aside.


Sauté Aromatics: In the same skillet, melt butter and add onions. Cook until translucent (about 3–4 minutes). Stir in minced garlic and cook another 30 seconds.
Cook the Mushrooms: Add mushrooms to the pan. Sauté 5–6 minutes until golden and tender. Sprinkle in smoked paprika for flavor.
Build the Sauce: Add Dijon mustard, beef broth, and Worcestershire sauce. Stir and let simmer 3 minutes to reduce slightly.


Make It Creamy: Lower the heat. Stir in sour cream and heavy cream until smooth. Simmer gently (don’t boil) for 2–3 minutes.
Combine Everything: Return beef and its juices to the pan. Toss to coat and cook another 2–3 minutes until hot and creamy.
Taste and Serve: Adjust salt and pepper to taste. Garnish with chopped parsley.
